This rich dish is often called “crack chicken” because of its popular ranch, cheddar, and bacon combination. Cooking the pasta separately keeps it from becoming mushy and lets you loosen the sauce exactly as needed.
How to make it
- Season the chicken. Place chicken in a 5- to 7-quart slow cooker. Pour broth around it and sprinkle ranch seasoning evenly over the top.
- Cook. Cover and cook on low 4–6 hours or high 2–3 hours. Check breasts at the early end of the range.
- Shred. Once the chicken reaches 165°F, shred it in the cooker using two forks.
- Make it creamy. Stir in softened cream cheese. Cover for 10 minutes, then stir until smooth. Add cheddar in handfuls until melted.
- Cook the pasta. Boil pasta separately until just al dente. Reserve ½ cup pasta water, then drain.
- Finish. Fold pasta and most of the bacon into the chicken sauce. Add reserved pasta water a little at a time if needed. Top with remaining bacon and green onions.
Food-safety check: Chicken must reach at least 165°F in the thickest part. Do not put frozen chicken directly into a slow cooker.
How to keep the sauce smooth
Soften the cream cheese, add it after the chicken is cooked, and use freshly shredded cheddar. Pre-shredded cheese often contains anti-caking powder that can make the sauce slightly grainy.
Storage and reheating
Refrigerate leftovers within two hours and use within 3–4 days. Reheat gently with a splash of milk or broth until steaming hot. Creamy pasta is best fresh and may change texture after freezing.
Easy variations
- Add vegetables: Stir in thawed peas or steamed broccoli with the pasta.
- Spicy: Add diced jalapeño or a pinch of cayenne.
- Lighter sauce: Use one-third-less-fat cream cheese and reduce cheddar to 1 cup.
